  • Water (to blend and adjust consistency)
  • Banana leaves or aluminum foil (for wrapping and steaming)

Instructions:

1. Prepare the Beans:

  • Start by removing the skins from the black-eyed peas. You can do this by soaking the beans in water for a few hours or overnight. After soaking, rub the beans between your hands or use a blender to gently pulse, and then rinse the skins off. Alternatively, you can use a peeled canned or dried beans if you prefer.
  • Once the beans are peeled, blend them into a smooth paste with the chopped onion, bell peppers, and chilies (if using). Add a little water as needed to help blend the mixture.

2. Mix the Ingredients:

  • In a large bowl, combine the blended beans with the ground crayfish, ginger, garlic powder, and salt. Add vegetable oil or palm oil to the mixture to enhance the flavor and color.

4. Steam the Moi Moi:

  • Place the wrapped parcels into a steamer, large pot with a lid, or pressure cooker. Add water to the bottom of the pot to create steam (but not touching the Moi Moi), then cover the pot and steam for 45 minutes to 1 hour, or until the Moi Moi is firm and fully cooked.
