Instructions:

1. Prepare the Spinach:

  • Wash the spinach leaves thoroughly to remove any dirt or grit.
  • Blanch the spinach by placing it in boiling water for 2-3 minutes, then transferring it to ice-cold water. This helps preserve the bright green color and nutrients of the spinach. Drain and set aside.

2. Cook the Soup Base:

  • In a large pot, heat the olive oil or ghee over medium heat.
