Jollof Rice Recipe | Classic West African Dish with Grilled Chicken and Plantains
Jollof Rice is a popular West African dish made with rice, tomatoes, onions, and a variety of spices. Itβs especially loved in countries like Nigeria, Ghana, and other parts of West Africa. This flavorful dish is typically served as a main course for celebrations, family gatherings, or casual meals, and it can be made with different meats or vegetarian options.

Ingredients (Serves 4-6)
- 2 cups long-grain parboiled rice (washed and drained)
- 4 medium tomatoes, blended or chopped
- 1 medium onion, chopped
- 1 bell pepper, chopped (optional for added flavor)
- 1-2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon ground ginger
- 1 teaspoon thyme
- 1 teaspoon paprika or smoked paprika
- 1 teaspoon curry powder
- 1-2 tablespoons tomato paste (for a richer color and flavor)
- 3 cups chicken or vegetable broth
- 1 tablespoon bay leaves (optional)
- 1-2 teaspoons salt (to taste)
- Β½ teaspoon black pepper
- 1 cup frozen mixed vegetables (peas, carrots, or your preferred mix)
- Protein option: 1 lb chicken (fried, grilled, or cooked to your liking), shrimp, or beef (optional)
Instructions
Step 1: Prepare the Tomato Sauce
- In a blender or food processor, blend the tomatoes, onions, and bell pepper until smooth. If you like a chunky texture, blend less.
- In a large pot or deep skillet, heat 2 tablespoons of vegetable oil over medium heat.
- Add the blended tomato mixture into the pan and cook for about 10-15 minutes, stirring occasionally to avoid burning.
- Add the tomato paste, garlic, ginger, thyme, paprika, and curry powder. Stir well, and cook for an additional 5-7 minutes to develop the flavors.
Step 2: Cook the Rice
- Add chicken or vegetable broth to the tomato mixture and bring it to a boil.
- Stir in salt, black pepper, and any additional spices you prefer.
- Add the washed rice to the pot and stir to combine. Ensure that the rice is covered with the tomato mixture and liquid.
- Add bay leaves and reduce the heat to low. Cover the pot and let it simmer for about 25-30 minutes, or until the rice is cooked through and tender. Make sure to stir the rice occasionally to prevent it from sticking to the bottom. Add a little more broth or water if necessary.
- Add the frozen mixed vegetables and stir them into the rice about 10 minutes before the rice is fully cooked, so they have time to thaw and warm up.

Step 3: Final Touches
- Once the rice is fully cooked, taste for seasoning and adjust salt or pepper if necessary.
- For extra flavor, garnish with fried chicken, grilled shrimp, or beef on top of the rice.
- Let the rice rest for about 5 minutes before serving to allow the flavors to settle.
Serving Suggestions
- Serve Jollof Rice with fried plantains (dodo), grilled meats, or a side salad for a complete meal.
- It also pairs wonderfully with a refreshing drink like zobo (hibiscus tea) or fruit juice.
