  • 3 cups chicken or vegetable broth
  • 1 tablespoon bay leaves (optional)
  • 1-2 teaspoons salt (to taste)

  • Protein option: 1 lb chicken (fried, grilled, or cooked to your liking), shrimp, or beef (optional)

Instructions

Step 1: Prepare the Tomato Sauce

  1. In a blender or food processor, blend the tomatoes, onions, and bell pepper until smooth. If you like a chunky texture, blend less.
  2. In a large pot or deep skillet, heat 2 tablespoons of vegetable oil over medium heat.
  3. Add the blended tomato mixture into the pan and cook for about 10-15 minutes, stirring occasionally to avoid burning.
  4. Add the tomato paste, garlic, ginger, thyme, paprika, and curry powder. Stir well, and cook for an additional 5-7 minutes to develop the flavors.

Step 2: Cook the Rice

  1. Add chicken or vegetable broth to the tomato mixture and bring it to a boil.
  2. Stir in salt, black pepper, and any additional spices you prefer.
  3. Add the washed rice to the pot and stir to combine. Ensure that the rice is covered with the tomato mixture and liquid.
